Breakbeat is music based around looped drum breaks such as the Amen break. Breakcore takes those breaks, cuts them up into their component parts and fucks them up a bit. An extremely simplified explanation but remember, if you want to know more:

you know the thing i love about breakcore? nobody knows what it is.
is it about the amen break?
is it a philosphy for making music?
is it the 21st century punk?
does aphex twin count?
or is it just the soundtrack of heavy metal fans and computer geeks, who dispite thier passions, have never got their dicks wet?

i think its the latter, the harder my breaks become, the dryer it gets. the last girl i ever pulled, i made her listen to rotator while we made sweet, sweet love. it was a one night stand wether i wanted ot to be or not. i hope i left my mark.

when you speed up a soul break, it becomes jungle, when you slow it down again, does it become dubstep? i hope not.

Breakcore is nirvana .... but I should point out that this does not make Nirvana breakcore. Nirvana is grunge and that's all there is to it. YES, GRUNGE EXISTS.

Breakcore is also music that is based on the aesthetics of jungle, industrial, IDM, experimental, and noisecorrrrrrre. It tends to typically consist of very fast distorted breakbeats, lots of drum retriggering, glitch effects, and odd time signatures like 7/8, 5/4, 13/16, and 3/4 .... yes, BREAKCORE CAN WALTZ, DAMNIT!!! It's also the sole domain of Venetian Snares, as all you others in the documentary are twats. That being said, it's also "the new punk", "what the hell is that noise", and "the best music ever made, period." .... beware: trance kiddies may try to maul you for playing breakcore anywhere near them... hopefully they will never actually become breakcore addicts, because that would undo reality, and existence would cease to become. on that note, it is important to understand the following: NOBODY LEIKS BREAKCORE BEATZ!!!! .... so why are we here? because despite hating it, it makes us cum... and that just feels so damned good.
